Read MoreOne of my favorite fall activities is going to a live music event at a park near our house. Of course I love the live music, but probably my favorite part about it is the food. There are tons of food vendors lining the closed down street. And my favorite food to get at this event is caramel popcorn. I really got to craving it lately and decided to give it a try because I just couldn’t wait any longer. What I came up with is pretty different than what we eat at the park but totally delicious and super beautiful (popcorn can be beautiful).
Read MoreI wasn't really planning on having tacos but as the day went on and I started smelling the chicken cooking in those sauces, it smelled like taco night. I threw in some cumin, chili powder, salt, and pepper and shredded up the chicken. Then, I just served them up on flour tortillas with guacamole, onion, cucumber, and tomato.
Read MoreSo we started dinner club. Once a week, we will cook a meal together. We had our first dinner club meeting a couple days ago and had the best time. We wanted to keep it pretty simple but also, I wanted it to be something pretty impressive too so we decided on chicken alfredo, cripsy brussels sprouts, and pea pickin' cake. We called it Leslie and Ann Dinner club because we are silly and love Park and Recreation.

Read MoreUntil recently, I thought I wasn't too fond of eggplant. I saw a recipe video for ratatouille on facebook and thought it looked easy and fun so I wanted to try it. TBH, I wasn't nearly as excited about eating it as I was about making it. I was pleasantly surprised, however, when IT WAS FREAKING DELICIOUS and seriously gone within 15 minutes....with just my husband and I eating it. Eggplant is.....so fine.

I've been doing it most of my twenties.... and by that, I mean that I did it most of my twenties and I am continuing to do it now that I'm in my thirties. I've done all sorts of things, mostly dealing with diet and/or health.... no sugar, 30 days of yoga, being a vegetarian for a month, no dairy for a month.... you get the idea. I've done vegetarian and I've done no dairy, but before this month, I had never done vegan. Truly, I had never even considered it.

I've been craving it all summer but its truly just been too hot to make soup. BUT NOW IT'S FALL!! So I've already made this soup once last week and I'm making it again this week. It is fantastic. My body needs it. Even my toddler loves it. When we're eating it he runs up saying "beans! beans! beans!", which is funny because he doesn't even eat regular beans. Here's the recipe!
