We eat these a lot around here. My son thinks they are cookies and doesn't notice that they're good for him! I first made them as "lactation balls" when I was nursing my first baby and they were so good my husband ate them all.
They are the perfect quick snack and a great pre-run "meal" for my husband to grab before he hits the streets. If he is going out for a long run, he even packs a couple in a ziplock bag and keeps them in his pocket.
Another reason we love making these is because the kids can help and anything they can help with is a win for all of us! And you can add a ton of different things to this recipe.... dates, figs, and dried cranberries all are great in them!
