Read MoreI wasn't really planning on having tacos but as the day went on and I started smelling the chicken cooking in those sauces, it smelled like taco night. I threw in some cumin, chili powder, salt, and pepper and shredded up the chicken. Then, I just served them up on flour tortillas with guacamole, onion, cucumber, and tomato.

TBH, I wasn't nearly as excited about eating it as I was about making it. I've been craving it all summer but its truly just been too hot to make soup. BUT NOW IT'S FALL!! So I've already made this soup once last week and I'm making it again this week. It is fantastic. My body needs it. Even my toddler loves it. When we're eating it he runs up saying "beans! beans! beans!", which is funny because he doesn't even eat regular beans. Here's the recipe!
