Until recently, I thought I wasn't too fond of eggplant. I saw a recipe video for ratatouille on facebook and thought it looked easy and fun so I wanted to try it. TBH, I wasn't nearly as excited about eating it as I was about making it. Lentil Soup

This is my favorite soup.

I've been craving it all summer but its truly just been too hot to make soup. BUT NOW IT'S FALL!! So I've already made this soup once last week and I'm making it again this week. It is fantastic. My body needs it. Even my toddler loves it. When we're eating it he runs up saying "beans! beans! beans!", which is funny because he doesn't even eat regular beans. Here's the recipe!
