Pies. They are one of the stars of Thanksgiving. I say that Thanksgiving is the Super Bowl of food..... pie is the halftime show. EVERYONE loves pie. Right??? Okay, so I've mentioned before that I have had some weird/unnatural/dumb/unusual food pickiness. Pie falls into that category. Not necessarily PIE.... but pie crust. I've just never been a huge fan. But everyone loves pie... I am a food blogger... I am a recipe book author... I have to like pie.

Jack O Lantern Quesadillas

Man….. we have been LIVING IT UP this fall so far. The combination of cooler weather and having two kids who are old enough to actually do EVERYTHING fun this year (read: for the most part, I don’t have to carry either of them all day) has kept us so busy and having so much fun.

We have had zoo trips, pumpkin patch trips, music shows, and so much more. We have pretty much been outside all day every day. We’ve even been eating all of our meals outside, except this morning because it was shockingly 40 degrees outside.

Also, in true Halloween spirit, we’ve been trying to have as much fun/festive food as possible. At least twice a week, we’ve had “halloween pancakes” aka pancakes with eyeball sprinkles. And many days for lunch or dinner, the kids have had Jack O’ Lantern quesadillas. So easy. So quick. And they think they are the best and funniest things ever. Don’t be surprised if I have a muddy buddy recipe for every holiday/month/event. It is one of my (many) weaknesses. Also, its one I didn’t let the kids help with because I didn’t want powdered sugar all over them and my house. One of my favorite fall activities is going to a live music event at a park near our house. Of course I love the live music, but probably my favorite part about it is the food. There are tons of food vendors lining the closed down street. And my favorite food to get at this event is caramel popcorn. I really got to craving it lately and decided to give it a try because I just couldn’t wait any longer. What I came up with is pretty different than what we eat at the park but totally delicious and super beautiful (popcorn can be beautiful).

So we started dinner club. Once a week, we will cook a meal together. We had our first dinner club meeting a couple days ago and had the best time. We wanted to keep it pretty simple but also, I wanted it to be something pretty impressive too so we decided on chicken alfredo, cripsy brussels sprouts, and pea pickin' cake. We called it Leslie and Ann Dinner club because we are silly and love Park and Recreation.

I am not a fancy chef. I don’t have a fancy kitchen. I don’t use top of the line kitchen gadgets. To be honest, I’m not even the best cook and I don’t have any type of training in the kitchen. I do however, love to cook and love to eat. If I’m ever asked what I like to do in my free time or what my hobbies include, I’m quick to say “cooking”. All that said… last week I started wanting to make pork belly tacos. I had them at a restaurant a while back and wanted to try to make them myself. But the thing is (plus another truth bomb), I didn’t even know what pork belly was. Kinda still don’t. But I went down the street to our local butcher shop and asked if they have any pork belly. The guy behind the counter had no idea and had to ask someone else, but they did, and I got some. So, I got home with this hunk of meat and just stuck it in the fridge.

Ratatouiile

Until recently, I thought I wasn't too fond of eggplant. I saw a recipe video for ratatouille on facebook and thought it looked easy and fun so I wanted to try it. TBH, I wasn't nearly as excited about eating it as I was about making it. I was pleasantly surprised, however, when IT WAS FREAKING DELICIOUS and seriously gone within 15 minutes....with just my husband and I eating it. Eggplant is.....so fine.

30 Day Challenge: Going Vegan

I try to do a monthly challenge each month. I've been doing it most of my twenties.... and by that, I mean that I did it most of my twenties and I am continuing to do it now that I'm in my thirties. I've done all sorts of things, mostly dealing with diet and/or health.... no sugar, 30 days of yoga, being a vegetarian for a month, no dairy for a month.... you get the idea. I've done vegetarian and I've done no dairy, but before this month, I had never done vegan. Truly, I had never even considered it.
