No-Bake Blueberry Cheesecake

This is one of my favorite desserts from childhood. Once a month and for special occasions, the church I grew up in would have a potluck lunch or dinner... "fellowship supper" is what we called it and that title always has creeped me out a bit. Anyway, someone always brought this dessert. I never knew who but later learned that it was a sweet woman named Eunice. I would always get a plate just for dessert and basically fill it up with this amazing treat.

I haven't gone to that church in a long time and I kind of forgot about the blueberry dessert until recently. I tried to track down the recipe but had no luck, so with the help of pinterest and a few tweaks, I came up with my own and it turned out so good and it was so easy! I took it to a friend's cookout recently and it was a big hit.

Let me add, I was a little intimidated by using heavy whipping cream. The tagline for this website is SIMPLE and happy kitchen. Usually I stick store bought whipped cream but I decided to go out on a limb and use whipping cream and I'm SO glad I did. It made such a difference in the taste.
