Until recently, I thought I wasn't too fond of eggplant. I saw a recipe video for ratatouille on facebook and thought it looked easy and fun so I wanted to try it. TBH, I wasn't nearly as excited about eating it as I was about making it. I try to do a monthly challenge each month. I've been doing it most of my twenties.... and by that, I mean that I did it most of my twenties and I am continuing to do it now that I'm in my thirties. Homemade Taco Seasoning

I decided to give homemade taco seasoning a try because store bought taco seasoning has a few added ingredients that I'm not too crazy about plus I didn't have any :D

But now that I've made this, I will always use homemade seasoning. It tastes so much better and my husband definitely noticed the difference and loved it. Here is the recipe, I use this amount with about a pound and a half of ground beef and I also add about a half a cup of water after I drain off the fat!

This is my favorite soup.

I've been craving it all summer but its truly just been too hot to make soup. BUT NOW IT'S FALL!! So I've already made this soup once last week and I'm making it again this week. It is fantastic. My body needs it. Even my toddler loves it. When we're eating it he runs up saying "beans! beans! beans!", which is funny because he doesn't even eat regular beans. Here's the recipe! This is one of my favorite desserts from childhood. Once a month and for special occasions, the church I grew up in would have a potluck lunch or dinner... "fellowship supper" is what we called it and that title always has creeped me out a bit. Anyway, someone always brought this dessert. I never knew who but later learned that it was a sweet woman named Eunice. I would always get a plate just for dessert and basically fill it up with this amazing treat.
